Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

Loved it! Dressing should be warm and needs to be tossed well with 2 big spoons. If you prefer to only dress half the salad and keep the rest for another time, make dressing in a glass jar and only use half then re warm to use on the remainder.

Very traditional warm spinach salad like my mom used to make. I did use scallions instead of red onions. Using bacon fat instead of olive oil in for the dressing is a game changer! Watching the video gives helpful hints on wilting the spinach a little bit more than from simply tossing in the warm dressing. I highly recommend.

Perfect combination and everything is balanced. I never measure the spinach for ounces, just grab and fill the bowl. Leftovers were eaten by anonymous eater in the middle of the night. 😉

😍 The middle of the night salad thief is me! Sometimes I get hungry in the middle of the night and started making a small salad and puts a little something in my tummy that isn't heavy. Works like a charm! 🍴

I added extra eggs too. One egg each on top of four large bowls of the mixed salad. Red onion and red wine vinegar is a must. Extra crispy bacon too. I sliced the onion and mushroom extra thin. I used 6 ounces of spinach instead of 8. It was a dinner hit, This is definitely a recipe I will continue to use.

I love this salad. It was exceptionally easy to do. I made several extra eggs and made them into hardboiled eggs. They were a great appetizer. I also put the spinach, mushrooms, and onion in separate bags so I could use them to assemble the salad quicker that night. Just wonderful with delicious salad dressing.

Three tablespoons of bacon fat. Go back and re-read the ingredient list then the directions. I miss pertinent info too sometimes - scanning the instructions. I always prep my mise en place to ensure everything is added in the correct order.

Step 3 indicates to reserve 3 Tablespoons of fat. Step 4 indicates to transfer the bacon fat to a small saucepan to continue making the dressing.

Excellent recipe. I’m not a raw onion fan so sautéed them in the bacon grease, sprinkled some on salad and put some in the dressing. I also cut sugar in half but added Mike’s Hot Honey to the dressing recipe. Definitely a do-over recipe!
